Physical activity boosts our energy, delivers nutrients to muscle cells, and postpones muscle fatigue. When physical activity increases, water intake needs to increase too. Standing idly on the southern coast of Sri Lanka about an hour from Galle, Matara is a laid back city, despite being an important city in the Southern Province of Sri Lanka. The city was a part of ancient Sri Lanka's ‘Kingdom of Ruhuna’ which was established in 200 BC by Prince Mahanaga, who was the younger brother of King Devanampiyatissa, who pioneered in bringing Buddhism to Sri Lanka. The Ruhuna Kingdom burgeoned for centuries and was one of the three Sinhalese dominions that formed ancient Sri Lanka, or the 'Thun Sinhale'. Matara, which served as the capital for the kingdom, was called a several names including ‘Mapatuna’ and ‘Maha Theertha’. Maha theertha means great ferry, a name given on account of the Nilvala River which swiftly flows through the town, creating ample water area for ferries to cross. Yummiest Paniwalalu

Paniwalalu or jalebi can be served warm or cold. They have a somewhat chewy texture with a crystallized sugary exterior coating. Citric acid or lime juice is sometimes added to the syrup, as well as rose water. Jalebi is eaten with curd or rabri (North India) along with optional other flavours such as kewra (scented water). This dish is not to be confused with similar sweets and variants like imarti and chhena jalebi.  Ingredients for the paniwalalu recipe. 250g White lentils (Urad Dal/Vigna Mungo) 250g Rice flour Pinch of Salt 1 cup Coconut Milk Coconut oil for frying For the caramel syrup 100ml Kithul Treacle 150g Sugar 2 tblsps Ground Cinnamon 80ml Water Method Soak Urad Dal in water overnight or for 4-5 hours. Drain the water and grind to a thick paste in a blender/grinder/food processor. Add the salt and the coconut milk and mix to a thick paste. Whale watching as an organized activity dates back to 1950 when the Carbillo National Monument in San Diego was declared a public spot for the observation of Gray Whales. In 1955 the first water-based whale watching commenced in the same area, charging customers $1 per trip to view the whales at closer quarters. The spectacle proved popular, attracting 10,000 visitors in its first year and many more in subsequent years. The industry spread throughout the western coast of the United States over the following decade. In 1971 the Montreal Zoological Society commenced the first commercial whale watching activity on the eastern side of North America, offering trips in the St. Lawrence River to view Fin and Beluga Whales.
